I recently stayed with a friend for a few weeks, and she had just bought her first air fryer. One of the things she cooked regularly was skewers of various meats, straight from the freezer. Fifteen minutes later, dinner was on the table. I thought that was rather brilliant.

Thai Red Curry Chicken Skewers
These flavourful chicken skewers are inspired by Thai red curry and are perfect for the air fryer. The chicken stays juicy thanks to a simple marinade of red curry paste, coconut milk, and peanut butter, while sweet peppers add colour and a touch of natural sweetness.
Ingredients
- 500 g chicken breast, cut into bite-sized cubes
- 50 g Thai red curry paste, about ½ a 100 g pouch
- ¼ cup coconut milk
- 1 Tbsp natural peanut butter
- 2–3 sweet baby peppers, cut into chunks
- 8–10 short bamboo skewers
Instructions
Combine the red curry paste, coconut milk, and peanut butter in a bowl.
Add the cubed chicken and mix well to coat evenly.
Cover and refrigerate for 2–3 hours.
Thread the chicken and sweet peppers onto the skewers, alternating pieces as desired.
Preheat the air fryer to 190°C.
Arrange the skewers in a single layer in the air fryer basket.
Air fry for 12–15 minutes, turning halfway through cooking, until the chicken is cooked through and lightly browned. Depending on the size of your air fryer, you may need to do this in two batches. Do not crowd the basket.
Serve immediately with a salad or vegetables of your choice.
Notes
- The sweet peppers should remain slightly firm, which provides a pleasant contrast to the tender chicken.
- No additional sauce is necessary, as the skewers are flavourful on their own.
